YIKES!!!!!!!!
Just checked my marathon counter on the side bar and noticed I only have 18 days until the big run! Seriously, the marathon has come fast. I will be running 20 miles this Friday and a small run of 10 miles the following weekend, then the weekend after that is the big run! Yikes!

Super Busy!

I apologize to all of my bloggy buddies for not posting in a while. We have been super busy! And I am afraid to say that we are going to be super busy for another week or so. Next week I fly out to Washington D.C. for work! Fun but stressful at the same time! I will write more concerning my trip later when I have time.
Nate and I were just called as scout leaders in our ward. We will have the Wolves (8 year olds). I am excited and nervous about this calling. It is going to require a lot of work and energy from us. Yikes! But 8 year olds are super-cute and I am sure Asher will love having "kids" at our house!
The good news is no one is sick at our house! I haven't been able to say that one for a while! Don't worry I knocked on wood after I wrote that sentence.
I hope this little entry finds you all well!

You would be amazed how many books I could cram into it. My bag has also been my best traveling companion, it has been with me to Israel, Egypt, Jordan, England, France, Italy, Hawaii, Washington D.C., Boston (3 times), Seattle (4 times), Mexico, Phoenix, San Francisco, San Diego, Las Vegas (4 times), and Orlando. Why-not use Missletoe's "Why-Not Wednesday"
Missletoe my sister does a "Why-Not Wednesday" this is the day of week where she picks one thing that she normally would not do and actually do it, then she blogs about it. Well today for our "Why-Not Wednesday" we decided hey, why not start our garden. What you say the ground is still frozen how are you going to start a garden? Well.....


Home Depot has these fun garden starts where you can plant your seeds and watch them grow. So that is exactly what we did. And when I say we Naphurs did all of the work, but I am totally going to enjoy watching them grow. Naphs planted a few of my favorite fruits, vegetables, and herbs so, here is to a summer full of fresh cucumbers, watermelon, tomatoes, spinach, and basil. Yummy!

Coach Pox
According to the doctor, it's not an allergy to amoxicillin, phew! It's not the chicken pox, double phew! Then what is it?
I call it Coach pox the doctor says it is a side effect of all the viruses Coach has had this season. As if the ear infection he got last week wasn't enough! Poor little guy has had more than his fair share of sickness this season. Blah!

Target Dollar Bin Find....
Delicious!
So I tried something new for dinner the other night and it was delicious! I got the recipe off the back of my Quaker Oats Quick Barley box. Below is the recipe. Not only is it delicious it is nutritious! I hope you enjoy!
Chicken Barley Chili
1(14.5 oz) can Tomatoes, diced, undrained, (may use seasoned tomatoes)
1(16 oz) jar/can salsa or tomato sauce
1 cup Quaker Quick Barley
3 cups water
1 tablespoon chili powder
1 teaspoon cumin
1 (15 oz.) can Black beans, drained, rinsed
1 (15 1/4 oz) can corn, whole kernel or corn with peppers, undrained
3 cups chicken breast, cooked and cut into bite-sized pieces
Reduced or no fat cheddar cheese (optional)
Reduced fat of fat free sour cream (optional)
In a 6-quart saucepan, combine first 7 ingredients. Over high heat bring to a boil; cover and reduce heat to low. Simmer for 20 minutes, stirring occasionally. Add beans, corn and chicken; increase heat to high until chili comes to a boil. Cover and reduce heat to low. Simmer for another 5 minutes, or until barley is tender. If upon standing the chili becomes too thick, add more chicken broth, tomato sauce or water until chili is desired consistency. If desired, top with shredded cheese and sour cream. Makes 11 (1 cup) servings.
NUTRITION INFORMATION PER 1 CUP SERVING: Calories 270, fat 4g, Calories from fat 30% Calories from fat 12%, Cholesterol 60 mg, sodium 700 mg, carbohydrate 27g, dietary fibers 5g, protein 32 g.
